Ingredients

  • 1/2 c. butter
  • 1 c. sugar
  • 2 eggs
  • 2 c. flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 c. milk
  • 1 tsp. vanilla
  • 2 1/2 c. blueberries
  • sugar (for sprinkling on top)

Method

  • Grease muffin tins.
  • Cream butter and sugar.
  • Add eggs, beating well.
  • Combine flour, baking powder and salt; add to creamed mixture alternately with milk and vanilla.
  • Crush 1/2 cup berries; add to batter.
  • Fold in remaining berries.
  • Spoon into muffin tin; sprinkle with sugar.
  • Bake for 30 minutes at 375°. Makes 12 to 24 muffins, depending on pans.
