Ingredients

  • 2 c. flour
  • 3 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 c. sugar
  • 2 eggs, slightly beaten
  • 1 c. milk
  • 1/4 c. butter, melted
  • 1 c. blueberries

Method

  • Sift into a mixing bowl first 4 dry ingredients.
  • In another bowl, mix eggs, milk and melted butter.
  • Pour the wet ingredients over the flour mixture.
  • Stir only enough to dampen the flour. Stir in the blueberries last.
  • Batter should not be smooth.
  • Spoon into buttered or paper lined muffin tins, having the tins about 2/3 full.
  • Bake at 400° for 15 minutes.
  • Makes 12 muffins.
