Ingredients
- 2 c. flour
- 3 tsp. baking powder
- 1/2 tsp. salt
- 1/2 c. sugar
- 2 eggs, slightly beaten
- 1 c. milk
- 1/4 c. butter, melted
- 1 c. blueberries
Method
- Sift into a mixing bowl first 4 dry ingredients.
- In another bowl, mix eggs, milk and melted butter.
- Pour the wet ingredients over the flour mixture.
- Stir only enough to dampen the flour. Stir in the blueberries last.
- Batter should not be smooth.
- Spoon into buttered or paper lined muffin tins, having the tins about 2/3 full.
- Bake at 400° for 15 minutes.
- Makes 12 muffins.
