Ingredients

  • 2 c. Blueberries, frzn
  • 3/4 c. Maple syrup
  • 1 tsp Orange peel, grated
  • 1 Tbsp. Cornstarch
  • 2 Tbsp. Water
  • 3 x Large eggs, beaten
  • 3/4 c. Lowfat milk
  • 1 tsp Vanilla
  • 1/4 tsp Nutmeg
  • 8 slc Bread
  • 3 Tbsp. Margarine Sugar, powdered

Method

  • Combine blueberries, maple syrup and orange peel in a small saucepan.
  • Dissolve cornstarch in water; add in to blueberry mix.
  • Cook and stir till mix boils; reduce heat and simmer 1 minute or possibly till mix thickens.
  • Combine Large eggs, lowfat milk, vanilla and nutmeg; mix well.
  • Dip each slice of bread into egg mix.
  • Cook each slice in small amount of butter in skillet or possibly on griddle about 2 min or possibly till golden on each side.
  • Place one slice on each individual plate, spread with 3 Tbsp.
  • blueberry mix, top with second slice and 1 Tbsp.
  • blueberry mix.
  • Sprinkle lightly with powdered sugar.
