Ingredients
- 9 roma tomatoes
- 3 celery sticks
- 1/2 small red onion
- 2 garlic cloves
- 1 red capsicum
- 800ml tomato juice
- 150ml extra virgin olive oil
- 100ml vodka
- 2 tsp Tabasco
- 2 tbsp worcestershire sauce
- 3 slices stale white bread
- Salt
- Freshly ground white pepper
- Celery leaves for garnish
Method
Roughly chop tomatoes, celery sticks, onion, garlic, capsicum. Combine with remaining ingredients, except celery leaves, in a large bowl and marinate overnight. Blend and pass through a coarse strainer. Adjust seasoning and garnish with celery leaves before serving.
