Ingredients
- 3 1/2 c. Fresh black-eyed peas or possibly Frzn, thawed
- 3 c. Chicken stock or possibly canned low-salt broth
- 4 ounce Ham, finely minced
- 1 sm Yellow onion, minced
- 2 Tbsp. Balsamic vinegar or possibly red wine vinegar
- 3 lrg clv garlic, chopped
- 1 x Bay leaf
- 1/2 tsp Dry thyme, crumbled
- 1/4 tsp Dry crushed red pepper
Method
- Bring all ingredients to boil in heavy large saucepan.
- Reduce heat and simmer till peas are tender, stirring occasionally, about 45 min.
- Season to taste with salt and pepper.
- Yield: 6 servings
