Ingredients

  • 3 1/2 c. Fresh black-eyed peas or possibly Frzn, thawed
  • 3 c. Chicken stock or possibly canned low-salt broth
  • 4 ounce Ham, finely minced
  • 1 sm Yellow onion, minced
  • 2 Tbsp. Balsamic vinegar or possibly red wine vinegar
  • 3 lrg clv garlic, chopped
  • 1 x Bay leaf
  • 1/2 tsp Dry thyme, crumbled
  • 1/4 tsp Dry crushed red pepper

Method

  • Bring all ingredients to boil in heavy large saucepan.
  • Reduce heat and simmer till peas are tender, stirring occasionally, about 45 min.
  • Season to taste with salt and pepper.
  • Yield: 6 servings
