Ingredients
- 2 Tbsp. shortening
- 1 c. rice
- 1/4 tsp. red pepper
- 1 c. chicken broth
- 1 can black-eyed peas
Method
- Melt shortening in frying pan.
- Add rice.
- Stir and fry a short time.
- Add red pepper and chicken broth.
- Cover and cook rice until fluffy.
- Add black-eyed peas; stir.
- Add 1/2 chopped tomato (optional).
