Ingredients
- 1 lb. Polish sausage, cut in 1-inch pieces
- 1 green pepper, chopped
- 2 1/2 oz. pkg. saffron rice
- 1 1/2 c. water
- 1 small jar chopped mushrooms
- 1 small onion, chopped
- 1 can drained black-eyed peas
Method
- Brown the sausage and green pepper and drain.
- Put in cooktop casserole with the rice, water, mushrooms and onion. Simmer 20 minutes and add the black-eyed peas.
- Simmer 20 minutes more and serve with salad and crusty French bread.
