Ingredients

  • 2 cans peas, drained
  • 1/2 c. onion, chopped
  • 1/2 lb. lean ham, cut in strips or cubed
  • 1 clove garlic
  • 3 Tbsp. white wine vinegar
  • 3 Tbsp. pickled jalapeno pepper, minced
  • 1/3 c. vegetable oil
  • 3 Tbsp. lemon juice
  • 1 1/2 c. green onions, chopped
  • 1 1/2 c. brown rice, uncooked

Method

  • Cook peas, onion, ham and garlic together for 10 or 15 minutes.
  • Whisk vinegar and jalapeno pepper together and add the oil slowly in a stream and whisk until mixed.
  • Add oil mixture to the pea mixture.
  • Stir in the lemon juice and green onions; salt and pepper.
  • Marinate for at least 1 hour, stirring occasionally. (This will keep for many days refrigerated.)
