- 2 cans peas, drained
- 1/2 c. onion, chopped
- 1/2 lb. lean ham, cut in strips or cubed
- 1 clove garlic
- 3 Tbsp. white wine vinegar
- 3 Tbsp. pickled jalapeno pepper, minced
- 1/3 c. vegetable oil
- 3 Tbsp. lemon juice
- 1 1/2 c. green onions, chopped
- 1 1/2 c. brown rice, uncooked
Method
- Cook peas, onion, ham and garlic together for 10 or 15 minutes.
- Whisk vinegar and jalapeno pepper together and add the oil slowly in a stream and whisk until mixed.
- Add oil mixture to the pea mixture.
- Stir in the lemon juice and green onions; salt and pepper.
- Marinate for at least 1 hour, stirring occasionally. (This will keep for many days refrigerated.)
