Ingredients

  • 2 c. dry black beans
  • Ham bone
  • 2 med. onions
  • 1 c. minced celery with leaves
  • 1/2 c. minced carrots
  • 1/4 c. minced parsley
  • 2 bay leaves
  • 1 1/2 teaspoon salt
  • 1/4 teaspoon grnd pepper
  • 1 clove garlic
  • 1/4 teaspoon thyme
  • 3 tbsp. butter
  • 2 tbsp. flour
  • 1/2 c. Madeira
  • 2 tbsp. vinegar

Method

  • Wash beans.
  • Cover with water and soak overnight.
  • Drain and save liquid; add in liquid sufficient to make 10 c.. Add in beans and ham bone.
  • Simmer covered 2 1/2 to 3 hrs.
  • Add in vegetables and simmer 1/2 hour.
  • Add in spices.
  • Throw away bone.
  • Pour soup in blender to blend.
  • Refrigeratesoup and remove fat.
  • Heat 3 Tbsp.
  • butter in small pan.
  • Add in 2 Tbsp.
  • flour and a little soup.
  • Cook and stir till it boils, then stir into reheated soup.
  • Add in 1/2 c. Madeira and 2 Tbsp.
  • vinegar.
  • Garnish with grated hard-boiled Large eggs.
