- 1 (16 oz.) pkg. black beans
- 1 large ham bone with meat
- 1 large onion, chopped
- 1 large carrot, thinly sliced
- 1 medium potato, diced
- 1 cube chicken broth
- 1 Tbsp. Worcestershire sauce
- 1 tsp. Tabasco
- salt and pepper
- sour cream
- hard-boiled egg, finely chopped
- thin slice of lemon
Method
- Soak beans overnight.
- Drain, rinse and remove any bad beans. Put beans and next 7 ingredients in a large pot.
- Cover with water.
- Add salt and pepper to taste.
- Bring to boil.
- Cover and simmer 3 to 4 hours until done.
- Serve in soup bowls with a large tablespoon of sour cream on top.
- Garnish with hard-boiled egg or slice of lemon.
- Serves 6.
