Ingredients

  • 1 (16 oz.) pkg. black beans
  • 1 large ham bone with meat
  • 1 large onion, chopped
  • 1 large carrot, thinly sliced
  • 1 medium potato, diced
  • 1 cube chicken broth
  • 1 Tbsp. Worcestershire sauce
  • 1 tsp. Tabasco
  • salt and pepper
  • sour cream
  • hard-boiled egg, finely chopped
  • thin slice of lemon

Method

  • Soak beans overnight.
  • Drain, rinse and remove any bad beans. Put beans and next 7 ingredients in a large pot.
  • Cover with water.
  • Add salt and pepper to taste.
  • Bring to boil.
  • Cover and simmer 3 to 4 hours until done.
  • Serve in soup bowls with a large tablespoon of sour cream on top.
  • Garnish with hard-boiled egg or slice of lemon.
  • Serves 6.
