Ingredients

  • 2 (16 ounce) cans black beans
  • 2 cups salsa
  • 1 teaspoon butter
  • 1 medium onion, chopped
  • 1 red bell pepper, chopped
  • 2 garlic cloves
  • 1 tablespoon dried parsley or 1 tablespoon cilantro
  • 1 teaspoon ground cumin
  • 14 teaspoon salt
  • 14 cup shredded cheese
  • 1 medium tomatoes, chopped

Method

  • Blend 1 can of beans, and 1/2 cup of salsa in a food processor until smooth.
  • I use the Wonderful Salsa off this site.
  • Saute the onion, pepper, and garlic in the butter until tender.
  • Add all the rest of the ingredients to the pan, (except the cheese,and tomatoe) and simmer for 5 to 10 min., stirring often.
  • Pour into serving dish and garnish the top with the cheese and tomatoe.
  • Serve immediately with chips, and veggie sticks.
