- 2 (16 ounce) cans black beans
- 2 cups salsa
- 1 teaspoon butter
- 1 medium onion, chopped
- 1 red bell pepper, chopped
- 2 garlic cloves
- 1 tablespoon dried parsley or 1 tablespoon cilantro
- 1 teaspoon ground cumin
- 14 teaspoon salt
- 14 cup shredded cheese
- 1 medium tomatoes, chopped
Method
- Blend 1 can of beans, and 1/2 cup of salsa in a food processor until smooth.
- I use the Wonderful Salsa off this site.
- Saute the onion, pepper, and garlic in the butter until tender.
- Add all the rest of the ingredients to the pan, (except the cheese,and tomatoe) and simmer for 5 to 10 min., stirring often.
- Pour into serving dish and garnish the top with the cheese and tomatoe.
- Serve immediately with chips, and veggie sticks.
