Ingredients
- 1 or 2 chickens, cut up
- 1 large onion
- 1 bunch carrots
- 1 stick margarine
- 1 pt. heavy cream
Method
- Place washed chicken in a Dutch oven (do not pat dry).
- Add onion and carrots.
- Cut up margarine over top of vegetables. Season with salt and pepper.
- Cover; simmer over low heat until chicken is nice and soft, about 45 minutes.
- Remove from heat; let stand 5 minutes.
- Add cream; cover and let stand 10 minutes more. Serve with mashed potatoes.
