Ingredients
- 2 13/16 tablespoons water
- 3/8 ounce baker's yeast fresh
- 3/4 cup flour type 65
- 1 cup water
- 9/16 tablespoon salt
- 4 cups flour type 65
Method
- Heat the 50 grams of water and place into a bowl, along with the yeast and flour. Stir well and using hands, form into a sticky ball. Cover with plastic wrap and let rest in a warm place to rise.
- In the Thermomix mixing bowl, place the water and salt. Set to 1 1/2 minutes /98°F /speed 2.
- Add the dough. Mix for a few seconds at speed 6. Then set to 4 minutes/spike rate.
- Remove dough and place in a large bowl, cover with plastic wrap and let rise in a warm place for about 1 hour.
- Shape dough into a ball and place on a baking sheet sprinkled with flour. Make a horizontal cut in the middle of the dough ball.
- Bake in a preheated oven set to 392°F for 10 minutes. Then lower oven temperature to 356°F and bake for about 30 minutes more.
