Ingredients
- 6 medium potatoes, peeled and cut into 1/2-inch cubes
- 1 c. diced celery
- 1/2 c. chopped onion
- 2 c. water
- 3 chicken bouillon cubes
- salt to taste
- dash of pepper
- 2 1/2 c. milk
- 5 Tbsp. butter
- chopped parsley (optional)
Method
- Combine potatoes, celery, onion, water, bouillon cubes, salt and pepper in a saucepan; cook over medium heat until vegetables are tender, about 15 minutes.
- (Most of the liquid will be absorbed.)
- Add milk and butter; heat thoroughly.
- Serves 4.
