Ingredients

  • 6 medium potatoes, peeled and cut into 1/2-inch cubes
  • 1 c. diced celery
  • 1/2 c. chopped onion
  • 2 c. water
  • 3 chicken bouillon cubes
  • salt to taste
  • dash of pepper
  • 2 1/2 c. milk
  • 5 Tbsp. butter
  • chopped parsley (optional)

Method

  • Combine potatoes, celery, onion, water, bouillon cubes, salt and pepper in a saucepan; cook over medium heat until vegetables are tender, about 15 minutes.
  • (Most of the liquid will be absorbed.)
  • Add milk and butter; heat thoroughly.
  • Serves 4.
