Ingredients

  • 3 c. shredded All-Bran cereal
  • 1/2 c. vegetable oil
  • 1 c. raisins
  • 1 c. boiling water
  • 2 eggs, slightly beaten
  • 2 c. buttermilk
  • 1/4 c. molasses
  • 2 1/2 c. whole wheat flour
  • 4 tsp. sugar
  • 2 1/2 tsp. baking soda
  • 1/2 tsp. salt

Method

  • Combine cereal, oil and raisins in a large bowl.
  • Add boiling water.
  • Set aside to cool.
  • Slightly combine eggs, buttermilk and molasses in a small bowl.
  • Add to cooled mixture.
  • Combine flour, sugar, baking soda and salt; add to cereal mixture.
  • Stir just to moisten.
  • Cover batter with plastic wrap, wax paper or damp towel and let stand up to 1 hour.
  • Bake 20 to 25 minutes at 400° in baking tins 3/4 full.
  • Makes 2 dozen.
