Ingredients

  • 1-3/4 cup Wheat Flour
  • 2/3 cups Granulated Sugar
  • 1 Tablespoon Baking Powder
  • 3/4 teaspoons Salt
  • 6 Tablespoons Cold Unsalted Butter, Diced
  • 1/4 cups Chopped Walnuts
  • 1 whole Large Egg
  • 1/2 cups Plus 2 Tablespoons Milk
  • 3 drops Lemon Juice
  • 1/2 teaspoons Vanilla Extract
  • 1 cup Fresh Or Frozen Blueberries

Method

  • Preheat oven to 400F.
  • Spray one loaf pan with baking flour spray.
  • Combine flour, sugar, baking powder and salt until combined. With a pastry blender or two knives, cut in butter until mixture resembles fine crumbs. Add the chopped walnuts. Stir just to combine.
  • In a small bowl, whisk egg, milk, lemon juice, and vanilla until blended. Fold egg mixture into flour mixture gently, just until flour is moistened (batter will be lumpy). Carefully fold in blueberries.
  • Pour batter into prepared loaf pan. Bake for 20 minutes then cover the top with foil to prevent burning. Continue to bake at 400F for 40 minutes or until toothpick comes out clean. Transfer to a wire rack to cool.
