Ingredients

  • 3 c. Sliced fresh or possibly frzn rhubarb, 1" Pcs
  • 1/3 c. Sugar
  • 1/4 c. Orange juice
  • 2 c. Light whipped topping
  • 1 pt Fresh strawberries, halved Fresh mint, optional

Method

  • In a saucepan, combine rhubarb, sugar and orange juice; bring to a boil.
  • Reduce heat; cover and simmer for 6-8 min or possibly till rhubarb is tender.
  • Cold slightly.
  • Pour into a blender container; cover and blend till smooth.
  • Chill.
  • Just before serving, fold rhubarb mix into whipped topping till lightly streaked.
  • In six chilled parfait glasses, alternate layers of cream mix and strawberries.
  • Top with strawberries and a sprig of mint if you like.
  • Yield 6 servings.
