Ingredients
- 3 c. Sliced fresh or possibly frzn rhubarb, 1" Pcs
- 1/3 c. Sugar
- 1/4 c. Orange juice
- 2 c. Light whipped topping
- 1 pt Fresh strawberries, halved Fresh mint, optional
Method
- In a saucepan, combine rhubarb, sugar and orange juice; bring to a boil.
- Reduce heat; cover and simmer for 6-8 min or possibly till rhubarb is tender.
- Cold slightly.
- Pour into a blender container; cover and blend till smooth.
- Chill.
- Just before serving, fold rhubarb mix into whipped topping till lightly streaked.
- In six chilled parfait glasses, alternate layers of cream mix and strawberries.
- Top with strawberries and a sprig of mint if you like.
- Yield 6 servings.
