Ingredients

  • Fresh vegetables, such as cauliflower broccoli, asparagus, carrots, onions (whatever you like)
  • 1 gal water seasoned with
  • 2 Tbsp. salt Ice as needed
  • 2 c. extra virgin olive oil
  • 1 c. apple cider vinegar
  • 2 Tbsp. coarse-grnd mustard
  • 1 tsp granulated garlic
  • 1 tsp freshly-cracked black pepper

Method

  • To make marinade, whisk together oil, vinegar, mustard, garlic and pepper.
  • Bring salted water to boil, add in veggies, cover and cook, 2 to 4 min, drain off water, cover with ice, and "shock" the veggies back to being cool.
  • Drain veggies, add in to marinade, toss in marinade and cover, and chill for up to 7 days.
