Ingredients

  • 4 whole Beets
  • 2 teaspoons Olive Oil
  • 1 pinch Salt

Method

  • Preheat oven to 350 degrees F.
  • Scrub and peel (if you like) the beets.
  • Slice thinly; if you have a mandoline, thats great, but if not, just use a regular knife like I did.
  • Slicing thinly is key because this will reduce the cooking time and increase the crispiness factor.
  • Toss in olive oil and salt and bake for 40 minutes or until the beets begin to crisp around the edges.
  • Let rest for 5 minutes after baking and the beets will become even crispier.
