Ingredients
- 4 whole Beets
- 2 teaspoons Olive Oil
- 1 pinch Salt
Method
- Preheat oven to 350 degrees F.
- Scrub and peel (if you like) the beets.
- Slice thinly; if you have a mandoline, thats great, but if not, just use a regular knife like I did.
- Slicing thinly is key because this will reduce the cooking time and increase the crispiness factor.
- Toss in olive oil and salt and bake for 40 minutes or until the beets begin to crisp around the edges.
- Let rest for 5 minutes after baking and the beets will become even crispier.
