Ingredients

  • 2 cups white wheat beer
  • 1/2 cup shallots, sliced
  • 2 each bay leaves
  • 2 tsp. cracked black pepper
  • 1/4 cup heavy cream
  • 1/4 cup GREY POUPON Country Dijon Mustard
  • 2 lb. unsalted butter, cut into 1-inch cubes

  • 2 Tbsp. fresh chives, thinly sliced

Method

  • Cook beer, shallots, bay leaves and pepper in saucepan on medium heat until mixture is reduced to 2 oz.

  • Whisk in cream and mustard; cook until liquid is reduced by half.
  • Reduce heat to low.
  • Whisk in butter, 1 or 2 cubes at a time, until the emulsion begins to stabilize.
  • Slightly raise the heat and continue to add butter 2 to 3 cubes at a time and cook until fully incorporated.
  • Strain the sauce through a chinoise or cheesecloth.
  • Gently stir oranges into sauce.
  • Garnish with chives.
