- 2 cups white wheat beer
- 1/2 cup shallots, sliced
- 2 each bay leaves
- 2 tsp. cracked black pepper
- 1/4 cup heavy cream
- 1/4 cup GREY POUPON Country Dijon Mustard
- 2 lb. unsalted butter, cut into 1-inch cubes

- 2 Tbsp. fresh chives, thinly sliced
Method
- Cook beer, shallots, bay leaves and pepper in saucepan on medium heat until mixture is reduced to 2 oz.

- Whisk in cream and mustard; cook until liquid is reduced by half.
- Reduce heat to low.
- Whisk in butter, 1 or 2 cubes at a time, until the emulsion begins to stabilize.
- Slightly raise the heat and continue to add butter 2 to 3 cubes at a time and cook until fully incorporated.
- Strain the sauce through a chinoise or cheesecloth.
- Gently stir oranges into sauce.
- Garnish with chives.
