Ingredients

  • 1 1/2 lb. ground beef
  • 1/2 c. finely chopped onion
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 tsp. ground coriander
  • 1/8 tsp. cumin
  • 1/8 tsp. garlic powder
  • 1 1/2 c. sifted flour
  • 1/2 tsp. salt
  • 3 beaten eggs
  • 1 1/2 c. milk

Method

  • Cook beef and onion in hot skillet, cutting meat apart with fork.
  • Remove from heat.
  • Drain off fat and mix in teaspoon of salt and next 4 ingredients.
  • Set aside.
  • Place a 10-inch ovenproof well-greased skillet in 400° oven until very hot.
  • Blend flour and remaining salt in a bowl.
  • Add mixture of eggs and milk; beat until smooth.
  • Pour half of the batter into the hot skillet. Cover with beef mixture and top with remaining batter.
  • Bake at 400° for 40 minutes or until puffed and golden.
  • Cut into wedges and serve from skillet.
