Ingredients

  • 5 qt. water
  • 1 chuck roast (3 to 4 lb.)
  • 6 bouillon cubes
  • 1 can (8 oz.) tomato sauce
  • 1 lb. carrots, sliced
  • 1 medium onion, diced
  • 2 tsp. dried parsley
  • 1 c. orzo pasta
  • salt and pepper to taste

Method

  • Bring water to boil in large pot.
  • Add beef, bouillon cubes and tomato sauce; simmer for 2 hours.
  • Remove beef from pot.
  • Add vegetables, parsley, salt and pepper.
  • Simmer 45 minutes or until vegetables are tender.
  • While vegetables are simmering, shred beef. Add shredded beef and orzo to pot, cook 15 minutes, until orzo is done.
