Ingredients
- 5 qt. water
- 1 chuck roast (3 to 4 lb.)
- 6 bouillon cubes
- 1 can (8 oz.) tomato sauce
- 1 lb. carrots, sliced
- 1 medium onion, diced
- 2 tsp. dried parsley
- 1 c. orzo pasta
- salt and pepper to taste
Method
- Bring water to boil in large pot.
- Add beef, bouillon cubes and tomato sauce; simmer for 2 hours.
- Remove beef from pot.
- Add vegetables, parsley, salt and pepper.
- Simmer 45 minutes or until vegetables are tender.
- While vegetables are simmering, shred beef. Add shredded beef and orzo to pot, cook 15 minutes, until orzo is done.
