Ingredients
- 1 small clove garlic, minced
- 3 Tbsp. salad oil
- 1 1/2 c. diced, cooked beef or ham strips or diced, cooked pork or chicken
- 2 Tbsp. soy sauce
- 1 1/3 c. Minute rice
- 2 c. hot water
- 1 1/2 c. shredded lettuce, escarole or spinach
Method
- Saute garlic in oil just until golden brown.
- Add beef, rice, pepper and hot water; mix just to moisten rice.
- Bring quickly to a boil over high heat, then cover, remove from heat and let stand 5 minutes.
- Just before serving, add lettuce and soy sauce and toss lightly using 2 forks.
- Makes 4 to 5 servings.
