Ingredients

  • 1 small clove garlic, minced
  • 3 Tbsp. salad oil
  • 1 1/2 c. diced, cooked beef or ham strips or diced, cooked pork or chicken
  • 2 Tbsp. soy sauce
  • 1 1/3 c. Minute rice
  • 2 c. hot water
  • 1 1/2 c. shredded lettuce, escarole or spinach

Method

  • Saute garlic in oil just until golden brown.
  • Add beef, rice, pepper and hot water; mix just to moisten rice.
  • Bring quickly to a boil over high heat, then cover, remove from heat and let stand 5 minutes.
  • Just before serving, add lettuce and soy sauce and toss lightly using 2 forks.
  • Makes 4 to 5 servings.
