Ingredients

  • 1 lb lean ground beef
  • 1 (16 ounce) can refried beans
  • 2 (4 ounce) cans green chilies, drained
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 12 teaspoon salt
  • 18 teaspoon pepper
  • 12 teaspoon oregano leaves
  • 2 12 cups sharp cheddar cheese, grated
  • 3 teaspoons green onions, chopped
  • 1 (19 ounce) can enchilada sauce
  • 8 flour tortillas, 8 inch
  • sour cream

Method

  • Cook ground beef, salt, pepper, green chilies, onion, and garlic over medium heat until beef is browned and onion is tender.
  • Drain well.
  • Fold in refried beans.
  • Preheat oven to 350 degrees.
  • Pour 1/2 of enchilada sauce into a lightly greased 9x13 baking dish; sprinkle with oregano.
  • Spoon 3-4 T of beef and bean mixture onto each tortilla, top with 2 T cheese.
  • Roll up and place seam side down in sauce.
  • Top tortillas with remaining enchilada sauce and cheese.
  • Bake for 30 minutes.
  • Garnish with green onions and sourc cream.
  • Serves 4-6.
