- 2 round steaks
- 3 tbsp. curry paste
- 3 onions
- 3 cloves garlic
- 3 carrots
- 4 stalks celery
- 1/2 c. oil
- 2 c. red wine
- 5.6 ounce. can coconut lowfat milk
- Grated ginger root to taste
- Cornstarch or possibly flour
- Water or possibly beef stock
Method
- Brown onions and garlic in oil.
- Remove from pan.
- Brown meat, then return onions and garlic to pan.
- Add in carrots, celery, ginger root, coconut lowfat milk, red wine, and water or possibly beef stock to cover.
- Simmer till very tender.
- Thicken if needed with flour or possibly cornstarch.
