Ingredients

  • 1 1/2 lb. steak, cut in thin strips
  • 2 Tbsp. oil
  • 1 c. sliced onions
  • 1 c. converted rice
  • 1 (10 1/2 oz.) can beef broth
  • 3 Tbsp. soy sauce or to taste
  • 2 green peppers, coarsely chopped
  • 1 (2 oz.) jar pimentos, drained

Method

  • Brown beef in oil in skillet.
  • Stir in onions, rice, beef broth, one soup can of water and the soy sauce.
  • Bring to a boil. Reduce heat, cover and cook over low heat until liquid is absorbed, about 25 minutes.
  • Stir in peppers and pimentos; heat thoroughly.
