Ingredients
- 1/4 c low sodium soy sauce
- 1/2 red onion, sliced
- 1 tbsp garlic, minced
- 11/2 lb top sirloin steak, sliced 1 inch thick
- 1 tbsp sesame oil
- 2 tbsp rice vinegar
- 1 tbsp ginger, minced
- 4 c broccoli florets, fresh or frozen
- 1/2 cup dry brown rice (optional)
Method
- 1. Bring 2 quarts of water to boil
- 2. Meanwhile, heat a small bit of soy sauce in a large saute pan, add the onions and garlic and saute until opaque
- 3. Add beef and saute, turning often, for 7-10 minutes
- 4. Stir together the oil, vinegar and ginger and add to the saute mixture
- 5. Blanch the broccoli in boiling water (or microwave for 2 minutes) and add to the meat mixture and keep warm
- 6. Prepare brown rice according to box, then toss with beef and broccoli and serve.
