Ingredients

  • 1/4 c low sodium soy sauce
  • 1/2 red onion, sliced
  • 1 tbsp garlic, minced
  • 11/2 lb top sirloin steak, sliced 1 inch thick
  • 1 tbsp sesame oil
  • 2 tbsp rice vinegar
  • 1 tbsp ginger, minced
  • 4 c broccoli florets, fresh or frozen
  • 1/2 cup dry brown rice (optional)

Method

  • 1. Bring 2 quarts of water to boil
  • 2. Meanwhile, heat a small bit of soy sauce in a large saute pan, add the onions and garlic and saute until opaque
  • 3. Add beef and saute, turning often, for 7-10 minutes
  • 4. Stir together the oil, vinegar and ginger and add to the saute mixture
  • 5. Blanch the broccoli in boiling water (or microwave for 2 minutes) and add to the meat mixture and keep warm
  • 6. Prepare brown rice according to box, then toss with beef and broccoli and serve.
