Ingredients

  • 1 1/2 lb. ground beef
  • 1/4 c. chopped onion
  • 1/4 c. chopped green pepper
  • 3/4 c. barbecue sauce
  • 1 Tbsp. brown sugar
  • 1 (15 oz.) can vegetarian baked beans
  • 1 (10 oz.) can refrigerator biscuits
  • 1/2 c. low-fat shredded Cheddar cheese

Method

  • Heat oven to 375°.
  • In skillet, brown ground beef, onion and green pepper.
  • Drain.
  • Stir in beans, barbecue sauce and brown sugar.
  • Heat until bubbly.
  • Pour into a 2 1/2-quart casserole dish.
  • Separate biscuits and then cut in half crosswise.
  • Place biscuits, cut side down, over hot meat mixture.
  • Sprinkle cheese over biscuits.
  • Bake at 375° for 25 minutes or until biscuits are golden brown.
