Ingredients

  • 1 small ham bone, finely chop ham from bone
  • 1 pkg. Great Northern beans
  • 1 small or medium onion, finely chopped
  • 3 or 4 strips bacon, diced (raw)
  • 2 chopped carrots
  • 1 stalk celery
  • 1 or 2 potatoes
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 small can tomatoes (juice if needed)
  • 1 Tbsp. parsley

Method

  • Wash beans thoroughly (about 2 times).
  • Remove any bad ones as well as any "junk" that floats to the top.
  • Drain.
  • Add about 6 cups of water to the beans.
  • Cover.
  • Bring to a boil 2 to 3 minutes.
  • Remove from heat.
  • Do not remove cover; let set for 1 hour.
