Ingredients

  • 1 cup vegetable oil
  • 2 pounds shrimp medium
  • 1 tablespoon salt
  • 1 teaspoon black pepper coarsely ground
  • 1 tablespoon oregano crushed
  • 1 cup onions thinly sliced
  • 1 tablespoon garlic mashed
  • 2 each jalapeno pepper sliced
  • 1 x lemons juice of 2 lemons or 4 limes

Method

  • In large pan or wok over a camp fire (if at the beach) heat oil.
  • Add washed unshelled shrimps and stir-fry for 3 minutes.
  • Add seasonings and remainder ingredients.
  • Just before serving add the freshly squeezed lemon or lime juice.
