Ingredients
- 1 cup vegetable oil
- 2 pounds shrimp medium
- 1 tablespoon salt
- 1 teaspoon black pepper coarsely ground
- 1 tablespoon oregano crushed
- 1 cup onions thinly sliced
- 1 tablespoon garlic mashed
- 2 each jalapeno pepper sliced
- 1 x lemons juice of 2 lemons or 4 limes
Method
- In large pan or wok over a camp fire (if at the beach) heat oil.
- Add washed unshelled shrimps and stir-fry for 3 minutes.
- Add seasonings and remainder ingredients.
- Just before serving add the freshly squeezed lemon or lime juice.
