Ingredients
- flour (for dredging)
- garlic salt to taste
- 8 loin pork chops, trimmed
- olive oil
- 2 tsp. chopped fresh basil or 1/2 tsp. dried
- 1/2 c. Marsala wine or apricot or plum juice
Method
- Preheat oven to 250°.
- Combine flour and garlic salt in bag; add chops and toss lightly until they are thoroughly coated. Brown chops in heavy skillet using just enough oil to cover bottom of the skillet.
- Arrange chops in shallow ungreased baking dish without letting them overlap.
- Sprinkle with basil.
- Cover closely with foil.
- Bake until tender, about 1 1/2 hours.
- Skim off all fat.
- Add wine or fruit juice.
- Remove cover and continue to cook until liquid bubbles.
