Ingredients

  • flour (for dredging)
  • garlic salt to taste
  • 8 loin pork chops, trimmed
  • olive oil
  • 2 tsp. chopped fresh basil or 1/2 tsp. dried
  • 1/2 c. Marsala wine or apricot or plum juice

Method

  • Preheat oven to 250°.
  • Combine flour and garlic salt in bag; add chops and toss lightly until they are thoroughly coated. Brown chops in heavy skillet using just enough oil to cover bottom of the skillet.
  • Arrange chops in shallow ungreased baking dish without letting them overlap.
  • Sprinkle with basil.
  • Cover closely with foil.
  • Bake until tender, about 1 1/2 hours.
  • Skim off all fat.
  • Add wine or fruit juice.
  • Remove cover and continue to cook until liquid bubbles.
