Ingredients

  • 1 lb. skinned and boned chicken breasts
  • 2 Tbsp. vegetable oil
  • 1 c. sliced mushrooms
  • 3 Tbsp. chopped fresh basil
  • 2 pt. pasta sauce
  • 1/4 c. grated Romano cheese
  • 8 oz. fettuccine

Method

  • Cut chicken into 1-inch pieces.
  • Saute chicken in vegetable oil until meat turns white.
  • Add mushrooms and basil, cook until mushrooms are tender.
  • Add pasta sauce and simmer until heated through.
  • Cook fettuccine according to directions.
  • Top fettuccine with basil chicken sauce.
  • Garnish with Romano cheese.
  • Serves 4.
