Ingredients

  • 3 cups Cooked Barley
  • 3-1/2 cups Kale Leaves, Sliced Into Ribbons
  • 1 cup Cherries, Pitted And Halved
  • 2 Tablespoons Fresh Basil, Torn
  • 1/2 whole Lemon, Juiced
  • 2 Tablespoons Extra Virgin Olive Oil
  • 1 clove Garlic (small)
  • 1 teaspoon Honey
  • 1 pinch Salt And Pepper
  • 1/2 cups Walnuts, Toasted

Method

  • Combine barley, kale and cherries in a large bowl. Set aside.
  • Combine remaining ingredients except walnuts in a food processor and process until it reaches a dressing-like consistency (about 30 seconds). Pour dressing over salad and season with salt and pepper to taste. Top with toasted walnuts.
  • Serve room temperature or chilled.
