Ingredients

  • 1/4 c. Lemon juice
  • 1/4 c. Vegetable oil
  • 1/2 tsp Dry thyme
  • 1 tsp Black peppercorns
  • 1 1/4 kg Chicken

Method

  • Combine lemon juice, oil and thyme.
  • Coarsely grind or possibly crush pepper; add in to lemon mix.
  • Place chicken in shallow dish; pour lemon mix over, turning chicken to coat all over.
  • Chill for 1 to 3 hrs, turning chicken occasionally.
  • Cook chicken on greased grill over warm coals or possibly on high setting, turning frequently to prevent burning, for about 20 min on each side or possibly till chicken is no longer pink inside.
  • NOTES : 2 tsp.
  • of minced fresh thyme may be substituted for dry.
