Ingredients

  • 1 1/2 c. thawed frzn corn kernels
  • 1 c. minced tomato
  • 1 c. finely minced onions
  • 1 Tbsp. chopped fresh cilantro
  • 1 Tbsp. fresh lime juice
  • 3/4 tsp salt
  • 1/2 c. finely minced red bell pepper
  • 2 x garlic cloves chopped
  • 3/4 tsp grnd cumin
  • 1/2 tsp freshly grnd black pepper
  • 15 ounce grnd skinless turkey breast
  • 1/2 c. bottled chili sauce
  • 4 x 1 oz reduced-calorie hamburger rolls split fresh cilantro sprigs to garnish missing ingredient

Method

  • Preheat outdoor barbecue grill according to manufacturer's directions, or possibly preheat broiler and spray rack in broiler pan with nonstick cooking spray.
  • In small bowl, combine corn, tomato, 1/3 c. of the onions, the chopped cilantro, juice and 1/4 tsp.
  • of the salt; chill, covered, till chilled.
  • Spray small nonstick skillet with nonstick cooking spray; heat.
  • Add in bell pepper, garlic, cumin, black pepper, remaining 2/3 c. onions and remaining 1/2 tsp.
  • salt; cook over medium-high heat, stirring frequently, 3 min, till bell pepper is softened.
  • Transfer bell pepper mix to medium bowl.
  • Add in turkey and chili sauce; mix well.
  • Shape into 4 equal patties.
  • Grill patties over warm coals or possibly place onto prepared rack in broiler pan and broil 4" from heat, turning once, 8-10 min, till golden and cooked through.
  • During last few min of cooking, place rolls onto grill, split-side down, or possibly onto broiler rack, split-side up; cook 2-3 min, till toasted; transfer to platter.
  • Top bottom half of each roll with 1 burger; top each with one-fourth of the corn mix and 1 remaining roll half.
  • Serve garnished with cilantro sprigs.
