Ingredients

  • 1 c. sugar
  • 1/2 c. shortening
  • 1 tsp. vanilla
  • 2 c. flour
  • 1 tsp. baking soda
  • 1 c. coconut
  • 1 c. brown sugar
  • 1/2 c. butter or oleo
  • 1 egg
  • 1 c. potato flakes (instant)
  • 1/2 tsp. salt
  • 1/2 c. chopped pecans

Method

  • Heat oven to 375°.
  • Combine sugar, brown sugar, shortening, oleo and vanilla until well blended.
  • Beat in egg.
  • Lightly spoon in flour, potato flakes, soda and salt until thoroughly combined. Stir in coconut and nuts.
  • Shape dough into 1-inch balls and flatten with sugared bottom of a glass.
  • Cook 6 to 8 minutes. Makes 4 to 5 dozen.
