Ingredients
- 1 c. sugar
- 1/2 c. shortening
- 1 tsp. vanilla
- 2 c. flour
- 1 tsp. baking soda
- 1 c. coconut
- 1 c. brown sugar
- 1/2 c. butter or oleo
- 1 egg
- 1 c. potato flakes (instant)
- 1/2 tsp. salt
- 1/2 c. chopped pecans
Method
- Heat oven to 375°.
- Combine sugar, brown sugar, shortening, oleo and vanilla until well blended.
- Beat in egg.
- Lightly spoon in flour, potato flakes, soda and salt until thoroughly combined. Stir in coconut and nuts.
- Shape dough into 1-inch balls and flatten with sugared bottom of a glass.
- Cook 6 to 8 minutes. Makes 4 to 5 dozen.
