Ingredients

  • 2 bags Success Basmati Rice
  • 1 Tbsp. vegetable oil
  • 1 small onion, chopped King Sooper's 1 lb For $0.99 thru 02/09
  • 2 cloves fresh garlic, minced
  • 1 jalapeno pepper, sliced
  • 2 Tbsp. curry powder
  • 1 lb. boneless beef sirloin steak, thinly sliced Whole Foods 1 lb For $7.99 thru 02/09
  • 1-1/2 cups beef broth, divided
  • 1 Tbsp. cornstarch
  • salt and ground black pepper, to taste
  • sliced green onions, optional King Sooper's 1 lb For $0.99 thru 02/09

Method

  • Prepare rice according to package directions.
  • Heat oil in a medium skillet over medium heat.
  • Add onion; cook and stir until the onion has softened, about 5 minutes.
  • Stir in the garlic, jalapeno pepper and curry powder.
  • Add beef and 1 cup broth.
  • Reduce heat to medium-low, cover and cook 15 minutes, or until beef is cooked through and onions are tender and brown.
  • Combine remaining broth and cornstarch.
  • Increase heat to high and stir in cornstarch mixture.
  • Bring to a boil, stirring constantly.
  • Cook 1 minute.
  • Serve over rice.
  • Garnish with green onion, if desired.
