Ingredients

  • 1 stick unsalted butter
  • 6 ripe bananas, sliced lengthwise
  • 1 cup maple syrup
  • 1 generous shot rum
  • 1/2 cup pecans, coarsely chopped

Method

  • Melt butter in a large non-stick skillet over medium heat.
  • Add bananas and saute for one minute.
  • Add the maple syrup, lower heat and cook for another 2-3 minutes or until bananas are warmed through and well-coated.
  • Add rum, increase heat briefly (just until sauce is bubbly), then pour over pancakes and serve immediately, garnished with chopped pecans.
