Ingredients

  • 1/4 c. unsalted butter, room temperature
  • 1/3 c. sugar
  • 1 x egg
  • 1 tsp vanilla extract
  • 1 1/4 c. pastry flour
  • 1 1/4 tsp baking pwdr
  • 1/4 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 3/4 c. mashed banana
  • 1/2 c. white chocolate, minced, plus some for drizzling

Method

  • Preheat oven to 350 F. Grease and flour a 6 1/2 x 3-inch loaf pan.
  • Cream butter and sugar together till light and fluffy.
  • Beat in egg and vanilla extract.
  • In a separate bowl, sift together flour, baking pwdr, baking soda, cinnamon and salt.
  • Add in to creamed mix alternately with banana.
  • Mix in minced white chocolate.
  • Scrape batter into pan and spread proportionately.
  • Bake for 30 min till a tester inserted in the center of the cake comes out clean.
  • Allow to cold 10 min in the pan, then turn out onto a plate.
  • To Assemble:Heat white chocolate and drizzle on to cake.
