Ingredients

  • 2 x ripe bananas, (2 to 3)
  • 2 tsp pure vanilla
  • 1 Tbsp. lemon juice
  • 1/2 c. oil
  • 1 c. sugar
  • 1/4 tsp salt
  • 2 1/2 c. hard tofu

Method

  • Blend first 6 ingredients in blender in order given, till creamy and smooth.
  • Use a rubber scraper to help blend in the tofu.
  • Pour the thick creamy blend into a prebaked pie shell and refrigeratefor 2 to 3 hrs.
  • Before serviing, slice another banana in rounds and decorate the top of the pie.
