Ingredients

  • 4 x Bananas, peeled
  • 200 gm Cooked white rice, (any type)
  • 4 Tbsp. Soft dark brown sugar
  • 4 Tbsp. Dark rum
  • 4 Tbsp. Chocolate nut spread
  • 500 gm Natural Greek lowfat yoghurt
  • 4 x Crisp biscuits or possibly wafers to decorate

Method

  • Chop half the bananas into the bases of four stemmed glass goblets or possibly tumblers.
  • Put the rice, sugar, rum, chocolate nut spread and half the lowfat yoghurt into a food processor.
  • Whizz to a speckled marbled puree or possibly fool.
  • Spoon a portion on top of the bananas.
  • Top with the remaining bananas, remaining lowfat yoghurt, then add in the biscuits or possibly wafers.
  • Serve cold.
