Ingredients

  • 1 1/4 cup whole wheat flour
  • 1/4 cup flour, all-purpose
  • 1/2 cup rolled oats or quick-cooking
  • 1/2 cup brown sugar packed
  • 1 teaspoon baking powder
  • 1/2 cup applesauce natural
  • 1 large eggs
  • 1/2 cup yogurt
  • 1 teaspoon vanilla extract
  • 2 medium bananas ripe
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 cup walnuts chopped, or any pecans, or other nuts

Method

  • Preheat your oven to 350F (180C) and lightly cook a loaf pan with a cooking spray or greased with butter.
  • Mash the bananas in a large bowl.
  • Mix in the egg, yoghurt, sugar, applesauce and vanilla extract until well mixed.
  • In another bowl, whisk together the flours, baking powder, oats, cinnamon and nutmeg.
  • Pour the wet ingredients into the dry ingredients until just incorporated.
  • Fold in the nuts.
  • Pour the bater into the loaf pan.
  • Bake for 55 to 60 minutes or until inserting wooden stick into the center comes out clean.
  • Let cool in the loaf pan for 10 minutes.
  • Remove from the loaf pan and let cool on a wire rack.
