Ingredients
- 1/2 c. butter or margarine, softened
- 1 c. sugar
- 2 eggs
- 1 c. ripe, mashed bananas (2 medium size)
- 1/4 c. milk
- 1 tsp. vanilla
- 1/2 tsp. banana extract (optional; use if bananas are not really ripe)
- 1 1/2 c. flour
- 3/4 c. quick cooking oats
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 tsp. cinnamon (optional)
Method
- Cream the margarine and sugar.
- Beat in eggs one at a time. Stir in bananas, milk and extracts.
- Add remaining ingredients and stir by hand.
- Pour into 9 x 5-inch loaf pan, greased on bottom only.
- Bake at 350° for 55 to 60 minutes or until toothpick inserted in the center comes out clean.
- Makes 12 servings.
