Ingredients

  • 1/2 c. butter or margarine, softened
  • 1 c. sugar
  • 2 eggs
  • 1 c. ripe, mashed bananas (2 medium size)
  • 1/4 c. milk
  • 1 tsp. vanilla
  • 1/2 tsp. banana extract (optional; use if bananas are not really ripe)
  • 1 1/2 c. flour
  • 3/4 c. quick cooking oats
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 tsp. cinnamon (optional)

Method

  • Cream the margarine and sugar.
  • Beat in eggs one at a time. Stir in bananas, milk and extracts.
  • Add remaining ingredients and stir by hand.
  • Pour into 9 x 5-inch loaf pan, greased on bottom only.
  • Bake at 350° for 55 to 60 minutes or until toothpick inserted in the center comes out clean.
  • Makes 12 servings.
