Ingredients

  • 1-1/3 cup Sugar
  • 1/4 cups Dark Brown Sugar
  • 2 whole Large Eggs, Beaten
  • 2 teaspoons Vanilla Extract
  • 1 cup Banana, Mashed
  • 6 ounces, weight Light Banana Yogurt
  • 2/3 cups Unsalted Butter, melted
  • 1-1/2 cup Flour
  • 1-1/2 cup Whole Wheat Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 1 pinch Salt
  • 1/2 teaspoons Nutmeg
  • 2 teaspoons Cinnamon
  • 1 cup Walnuts, Chopped

Method

  • Preheat the oven to 350°F. Place baking liners in a muffin pan and spray lightly with nonstick cooking spray. In a large bowl combine sugars, eggs and vanilla. Stir in the mashed bananas, banana yogurt and butter. In a separate bowl, mix flours, baking soda, baking powder, nutmeg, cinnamon, and salt. Stir the dry ingredients into the banana mixture. Stir in walnuts. Divide the batter equally among the cups. Bake for 28 minutes, or until a toothpick inserted in the middle comes out clean.
