Ingredients

  • 2 1/2 c. Gold Medal unbleached flour
  • 1 1/4 c. mashed bananas
  • 1/3 c. whole milk
  • 1/2 c. granulated sugar
  • 1/2 c. brown sugar, packed
  • 1/4 c. shortening
  • 2 eggs
  • 3 tsp. baking powder
  • 1 tsp. salt
  • 1/2 tsp. baking soda
  • 1 c. chopped nuts

Method

  • Heat oven to 350°.
  • Grease and flour loaf pan, 9 x 5 x 3-inches.
  • Blend all ingredients in large mixer bowl on low speed for 15 seconds.
  • Beat on medium speed for 30 seconds, scraping bowl constantly.
  • Pour into pan.
  • Bake until wooden pick inserted in center comes out clean, 60 to 65 minutes.
  • Immediately remove from pan and cool completely on wire rack.
  • For better slicing, refrigerate bread overnight.
