Ingredients

  • 2 c. all-purpose flour
  • 3/4 c. sugar
  • 1/2 c. butter, softened
  • 2 eggs
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 Tbsp. grated orange peel
  • 1 tsp. vanilla
  • 1 c. ripe bananas
  • 1/4 c. orange juice
  • 1 c. flaked coconut
  • 3 1/2 oz. Macadamia nuts, chopped, or 3/4 c. walnuts, chopped

Method

  • In a large mixing bowl, combine flour, sugar, butter, eggs, baking soda, salt and orange peel.
  • Beat at low speed until well mixed.
  • Add bananas and orange juice.
  • Continue beating about 1 minute, well mixed.
  • Stir in coconut and nuts (batter will be thick).
  • Spread into 1 greased 9 x 5-inch loaf pan.
  • Bake about 35 to 45 minutes or until wooden toothpick comes out clean.
  • Cool. Bake at 350°.
