Ingredients

  • 2 x hard medium size or possibly 3 small bananas
  • 2 Tbsp. creamy peanut butter
  • 1 Tbsp. fruit preserves
  • 1/4 c. finely minced nuts such as walnuts or possibly pecans
  • 6 x lollipop sticks

Method

  • Peel bananas and cut off ends.
  • Cut bananas crosswise into 1-inch chunks; you should have about 12 chunks.
  • Spread one end of each piece with peanut butter, top with preserves and dip in grnd nuts.
  • To assemble kabobs: Skewer 2 pcs of banana on each lollipop stick, pushing stick through the plain sides first.
  • Press pcs together to achieve layered effect.
  • Serve immedi- ately or possibly wrap kabobs in plastic wrap, freeze and serve frzn.
  • Note: Try substituting coconut, wheat germ or possibly homemade granola crunch for the minced nuts.
  • For variety, try 2 or possibly 3 different combinations on one kabob.
  • Peanut butter, jelly and banana, a delicious combina- tion.
  • Makes 6 servings at 13 cents per serving.
