Ingredients

  • 1 1/2 c. sugar
  • 1/2 c. shortening
  • 2 eggs
  • 1 tsp. vanilla
  • 1 c. mashed bananas
  • 1/4 c. buttermilk
  • 3/4 tsp. baking soda
  • 1/2 tsp. salt
  • 2 c. flour
  • 1/2 to 1 c. nuts (save some nuts for top of cake)
  • 1 box banana instant pudding
  • Cool Whip

Method

  • Mix eggs, sugar and shortening together.
  • Add vanilla, bananas, buttermilk and baking soda.
  • Mix well.
  • Add baking powder, flour, salt and nuts.
  • Beat until fluffy.
  • Bake at 350° for 30 to 35 minutes in a 9 x 13-inch pan.
  • Cool.
  • Mix 1 package of banana instant pudding according to box directions.
  • Spread over cake. Spread Cool Whip over this.
  • Sprinkle with nuts.
