Ingredients

  • 2 c. flour
  • 1 tsp. salt
  • 1 1/2 c. sugar
  • 3 tsp. baking powder
  • 1/2 c. oil
  • 3/4 c. cold water
  • 1 tsp. vanilla
  • 2 mashed ripe bananas
  • 7 unbeaten egg yolks
  • 1/2 tsp. cream of tartar
  • 5 egg whites

Method

  • Beat 5 egg whites stiff with cream of tartar (reserve 2 egg whites for frosting).
  • Mix first 4 ingredients.
  • Make a well and add remaining 5 ingredients; mix by hand.
  • Fold yellow mixture into egg whites.
  • Add 1 cup chopped nuts (optional).
  • Bake in angel food tube pan at 350° for 55 minutes.
  • Turn pan upside down to cool.
