Ingredients

  • 1 1/2 c. oatmeal
  • 1 c. milk
  • 1 3/4 c. flour
  • 1 c. sugar
  • 1 Tbsp. baking powder
  • 3/4 tsp. salt
  • 1/4 c. melted shortening
  • 1 c. mashed bananas (2 medium)

Method

  • Combine cereal and milk; let stand 5 minutes.
  • Mix flour with sugar, baking powder and salt.
  • Stir egg, shortening and bananas into cereal mixture.
  • Add flour mixture.
  • Stir just until all flour is moistened.
  • Pour into greased 9 x 5-inch loaf pan.
  • Bake at 350° for 50 to 55 minutes.
  • Cool in pan 10 minutes.
  • Remove from pan and finish cooling on rack.
  • Wrap in foil and store overnight before slicing.
