Ingredients
- 1 1/2 c. oatmeal
- 1 c. milk
- 1 3/4 c. flour
- 1 c. sugar
- 1 Tbsp. baking powder
- 3/4 tsp. salt
- 1/4 c. melted shortening
- 1 c. mashed bananas (2 medium)
Method
- Combine cereal and milk; let stand 5 minutes.
- Mix flour with sugar, baking powder and salt.
- Stir egg, shortening and bananas into cereal mixture.
- Add flour mixture.
- Stir just until all flour is moistened.
- Pour into greased 9 x 5-inch loaf pan.
- Bake at 350° for 50 to 55 minutes.
- Cool in pan 10 minutes.
- Remove from pan and finish cooling on rack.
- Wrap in foil and store overnight before slicing.
